Finding "meat like it used to
taste" is one very good reason for paying a visit to Airey's
Farm Shop at Ayside in the Lake District National Park.
The shop is owned and run by the Airey family whose aim is to
produce quality meat with the flavour of years gone by.
Accordingly, they offer meat from rare and traditional breeds,
such as Lakeland Herdwick lamb, as well as modern day breeds.
The animals are raised on their own farms as naturally as
possible, or on local Cumbrian farms with the same standard of
animal welfare as their own.
The
Aireys identify four essentials for producing good meat with
tenderness and flavour: the breed of animal _ rare and
traditional ones tend to carry more fat and marbling which
gives better flavour; correct finishing, to the right
conformation and fat cover; stress-free animals at slaughter _
the Airey's have their own private slaughterhouse on the
premises; and maturing of meat _ the flavour is enhanced when
the meat is left to hang. The shop sells beef, pork, lamb,
bacon, ham and also makes its own range of sausages on the
premises. The shop is open from 10am to 5pm (Monday); 9am to
5.30pm (Tuesday to Friday), and from 9am to 12.30pm on
Saturday.
