The word `bistro' probably derives from the Russian word for `quickly', but the secret of success at the best bistros lies in the detailed preparation and discipline in the kitchen that enables service to be speedy. At the Bistro de la Mer the chefs do what all good cooks should do, combining careful preparation with good housekeeping, careful choice of ingredients and of course skilled, assured cooking. In other words, everything a good restaurant does a good bistro should do, and, as they say here, `bistros are just restaurants without tablecloths'.

The Bistro de la Mer's customers will find an outstanding eating experience, which combines with friendly, informed staff under Tony and Alison to ensure many repeat visits, both from local residents and from visitors from further afield. Ninety percent of the produce that goes into the kitchen is sourced locally, naturally including the seafood for which Cornwall is justly renowned, and the mostly organic meat, and the major suppliers are acknowledged on the menu. Among the favourites on the regular menu are classics like mussels steamed with garlic, shallots, white wine and parsley; fish soup and tiger prawn brochette. All these can be ordered as either starter or main course, and other popular mains are lemon and Dover soles with caramelised lime and Maldon sea salt, a trio of Cornish fish and organic fillet steak served in a choice of four ways: simple, with confit field mushroom and roast tomato; au poivre with Madagascan green peppercorns, cognac and cream; Rossini with foie gras, black truffle, madeira sauce and truffle oil; and surf and turf with mussels, tiger prawns and mussel and saffron beurre blanc. Seasonal specials - scallops, lobster, lamb - add further to the choice, and desserts like dark chocolate steamed sponge pudding with white chocolate ice cream and spiced port syrup keep the enjoyment level sky high to the very end, and the outstanding food is complemented by a well-annotated list of wines from around the world. Six house wines are available by bottle, half-litre or glass. Lunch is served from 12 to 2, dinner from 7. Closed all day Sunday and Monday October to March, but open on those evenings for the rest of the year.
